What is the Difference Between Herbal Teas, Tisanes and Herbal Infusions?

We get this question all the time and it’s a good one. There seems to be a little confusion between what we’re calling what and these terms get thrown around a lot describing hot steeped beverages. From a tea maker’s perspective, herbal teas, tisane and infusions are all the same thing: basically, herbs steeped in hot water. In an herbalist’s mind though, there is a very specific difference between teas and tisanes and what are considered true herbal infusions. Let us break it down for you.


Herbal Teas & Tisanes

These two are the same. This is your classic chamomile or mint tea. If you’re making a cup of herbal tea, whether from a bag or using loose leaf herbs, you’ll be using about a teaspoon of herbs for that cup of water and you’ll likely steep it somewhere around 4-8 minutes. Because of the scant amount of herbs and short steeping time, only the most water soluble parts of the plant end up in the water. Volatile chemicals that make up scent and flavor and then also some very minimal medicinal benefits from the plant.


Herbal Infusions

True herbal infusions are distinct because they are made with a larger amount of herbs and the steeping time is long. Most herbal infusions are not made by the single cup but if they were, the amount of herbs per cup would be between 1-4 tablespoons of herbs in one cup of herbal infusion. So, basically three to twelve times as many herbs as an herbal tea or tisane. The steeping time can be anywhere from four hours to twelve hours, which allows for a maximum extraction of nutrients from the herbs. This time brings out fats, proteins, carbohydrates, more minerals and vitamins as well as numerous phytochemicals and colors. What you’re left with is a delicious beverage that doubles as a whole foods multivitamin. 

So while the words tea, tisane, and infusion are often used interchangeably, the difference really comes down to strength, steeping time, and intention. Herbal teas and tisanes are lovely for taste and a moment of presence. True herbal infusions are deeper. They’re made to nourish.
